I am starting three weeks of holidays so it is a good time to get the eggs going. On Friday night, I did up a pork tenderloin stuffed with pine nuts, spinach and brie cheese.


On Saturday night, I did up spatchcocked adobo chicken along with stir fried carrots and smashed aloo potatoes.



It certainly is a tasty start to the holidays

I cooked the potatoes in some chicken stock with curry powder and an onion. Once done, I let them cool and then flattened them before tossing in some melted butter, garam masala, ground coriander and ground cumin. They were quit good.

Here is the recipe -- it is adapted from a Company's Coming cookbook:
Smashed Aloo Potatoes
1 lb baby Potatoes
1 Onion
Tbsp Curry Powder
2 tbsp butter, melted
1 tsp garam masala
1 tsp ground coriander
1 tsp ground cumin
salt
Boil potatoes in chicken stock with some curry powder and the onion till tender
Mix melted butter, garam masala, ground coriander and ground cumin.
Flatten the cooked potatoes and then toss in the butter mixture.
Cooked direct 400 degrees for 10 minutes.

We had a group over yesterday evening(Saturday)for dinner. On Friday we cook a 7 lb brisket for 9 hours and put it in the frig. On Saturday morning, we smoked 15 lbs of turkey breasts for 6-7 hours, then for appetizers we cooked chicken wings and ABT's. Started the finger food at 4:30 and the brisket and turkey at 6:15 pm. All turned out good. Briskets are a challenge. No one refused any food and all took leftovers home. Guss it was ok.
