Blackened Fish and Osso Bucco

did some blackened fish today -- what with all the talk here on the Forum lately :laugh: used the Large and some mesquite around 600 to start
think it was the flounder I brought back from C.C. in May, but nothing is marked :blink:
sure was good, though
mixed my own seasonings as I do need to use them up :)

After the LBGE had cooled off just a bit and we consumed the fish on greens with garden tomatoes and black olives, squirted with lemon juice,

I browned up some veal shanks, the more garden tomatoes, garlic, onion, celery and carrots, then put some cherry chunks in and added some defrosted veggie/chicken stock...

on the Egg at 260 now....

    No pics no proof Kari!! :laugh: Been a couple months since I done any Blacken eather. About time to. How are things out there? Finnaly cooling into the low 90's hear. Hard to believe we're nearly 1/2 way to OK again next year!! Got your ice bucket??! :laugh:

    Nice going, Kari ! I haven't done either one on the Egg, but they're on my list. I really like redfish for blackening, but I haven't been able to find any, for some reason. Flounder, huh? That might work.
