Chili Bean Poll

Looks like BEANS rule with a 3 plus to 1 ratio. I've always used beans with my family famous chili. So todays cook will be???? chili with black beans, market grind beef and pork from Publix. I sorta get heavy handed with the Penzeys hot chili powder. I can already hear "yes ma'am" *ithcin now. :cheer: :cheer: :cheer: This will be my first batch for the football season, then it really gets better. Also I need to hone my cornbread skills for cooler weather cookin.

Yeah baby...sounds perfect to me!!! If chili could be made without meat, I would. It's all about the beans baby!! :laugh: (I may get hung for that! :blink: )

Here is one.
Chili, Beans, Vegetarian
INGREDIENTS:
2 Tbs. Oil
1 1/2 Cups Chopped Celery
1 1/2 Cups Pepper, Green/Red
1 Cup Onion, Chopped
3 Cloves Garlic, Minced
2 28 Ozs. Can Tomatoes, Whole or Chopped, Undrained
3 16 Ozs. Cans Red Kidney Beans, Drained, Save Juice if Needed to add to chili
1/2 Cup Raisins
1/4 Cup Vinegar, Red Wine
1 Tbs Chili Powder
1 Tbs. Parsley
2 Tsps Salt
1 1/2 Tsp. Basil, Dried
1 1/2 Tsps. Oregano
1 1/2 Tsps. Cumin, Dried
1 Tsp Allspice
1/4 Tbs Pepper, Black
1/4 Tbs Tobasco Sauce
1 12 Ozs. Can Beer
3/4 Cup Cashew Nuts
1 Cup Shredded Cheese, Swiss or Choice
1 Bay Leaf
Procedure:
1 In a 1 1/2 gallon heavy pot, saute celery, pepper and onions, then add everything else except the beerr, nuts and cheese. Bring to a boil, reduce heat, simmer covered for about 1 1/2-2 hours. Add beer and nuts, return to a boil and then simmer for another 30-45 minutes. Remove bay leaf.

Math always was my bad suit. I is better at cookin. A Pinch of this and that. How much is a pinch??? Bout this much. I got about 4 or 6 pinches of Kona Koast reserved for todays Chili fixins.

Throw in a few pinches of rainbow pepper if you still have some or let me know.

No self-respecting Texan would use black beans. Pintos are the only way to go.

Well, I'm in the minority. For me, beans are a side. I like that con carne flavor.

I lived in Houstin for 15 years. To me, Texas style chili always meant no beans--the way I like it.

Done & cooling down for the intake. Added a touch of masa for flavor. Next will be a tad more cayenne on my bowl with crackers aka saltines and other asst. titles. Sat. nite will be with spicy cornbread. No sugar. Just for VI. I did add some Kidney Beans to compliment the Blk. beans. The taste = outa site. As usual.
