MP\'s take on Eenie Meenie\'s Corn Chowder

First off let me just say that it was delicious and Eenie was spot on with this one. I added some twists to it to suit my own tastes such as pancetta, chicken, red pepper flakes and curry to name a few. Needless to say dinner last night was good. Being stressed out at work is good for my tastes buds thats for sure.
On to the cook!
The raws, 18 ears of corn, light cream, chicken stock, a large onion, pack of chicken breasts, red peppers and pancetta.

I knew I bought the XL for a reason. Roasting away at 400 degrees.

Chicken marinated with curry powder, lemon juice, olive oil, paprika and garlic salt. Along with some red peppers.

Have to get the corn off somehow. Might as well use a large knife.

Everyone is ready to go.

Pancetta being crisped up in the stock pot. Have to love bacon fat.

Added the onion all diced up, put in some salt, pepper and red pepper flakes.

At this point I stuck with Eenie suggested recipe and added 6 cups of chicken broth, 2 1/2 cups of light cream, 2/3s of corn kernels after pureeing them in the blender.
Here comes the chicken. Important note here, marinate and season the chicken as you would if you were going to sit down and eat the chicken breast as the main course. It will really set off the soup when you bite into a chunk.

Added the still whole kernels into the stock pot and let it simmer away for 30 minutes on low heat.

A beer, a piece of Naan bread and homemade chicken corn chowder. Tastes like honey!

I must say that it came out great. The soup was sweet with the right amoung of heat and really made for a cozy night with the wife. Thanks Eenie!

I spent about $30 on ingredients. This makes enough chowder for 8 people so its a cheap meal if you're making this for a group.

I got that little additiona off watching a show on Clam Chowder. They always start off with a nice bacon or pancetta in the stock bought to do the base of the chowder. Really kicks up the flavor.

This chowder is so versatile.
I sure would have enjoyed eating a bowl of the Mud Pig Corn Chowder. -
Oh yummmmm, looks great...I think I need to look that one up.
