Morro Bay Rich's Pork and Green Chili Stew made me think of these. I have a bunch in the freezer, wrappied two each in plastic wrap and put all in a ziplock bag to freeze. I'm going to use one tonight for my knockwurst because I don't have any hot dog buns or bread.

I roll them a little thinner than usual and I really like them that way.

Homemade tortillas are the bomb. Maseca makes some corn flour for easy corn tortillas too. Try it sometime. I have goten where I prefer corn over flour.

Judy: Thanks for the recipe. We make the home made corn tortillas often. Kind of the best of both worlds IMO, corn tortilla flavor with the softness of the flour tortilla. Will try the flour tortillas soon! :)

In totally agree! ;) Except it turned taco dinner from a quick easy meal to one that requires a bit more prep, but it is well worth it imo.

Little pressed dough balls are well worth it

I didn't know corn tortillas could be soft and fluffy like flour tortillas! How do you do it?

Judy: It's the same as the flour tortillas but without the lard as a binder using corn flour.

First, you have to find this....
    http://www.amazon.com/Maseca-Corn-Flour-4-4-lbs/dp/B0000IJYK4
(sorry to send a link....) And PLEASE do not pay these prices!!! You should be able to find this instant corn flour product in your ethnic food isle, or an ethnic (latin type) market for less than $4 for approx 5 pound bag. (If you can't find it, email me, and I will ship you a bag) ;)

MASECA instant corn flour, a pinch of salt, water. Recipe I use is on the back of the bag. I mix it, wrap it, let it rest to hydrate, then roll or press into tortillas. A dry CI Skillet on medium, brown it up on each side (about 40 sec per side) good to go!!

The texture is soft like a flour tortilla, but it tastes like a corn tortilla, without the frying! In fact, these can be fried as well, but the dry skillet option is so amazing there's no need to add the extra calories. Truly...addictive. ;)

    Hope you try it! :)

Thanks so much for this. San Diego has a huge hispanic population and there shouldn't be any problem finding the corn flour. We're only half an hour from Mexico. I can hardly wait.

Judy...Just fair warning, they are really quite addictive. They're the "real deal" in tortillas...not this 'Americanized' mexican fried things out of a box. ;) While in one of those latin markets, see if you can't land a tortilla press, too. :) The tortilla press is one of my only "uni taskers", but I will never be without it. :) Can't wait for you to try them, either!!! Keep us posted!

LC can you run these through your pasta machine a few times? I know it would be hard to keep the round shape but you would get the thinness.

    Judy,

Being in San Diego, I'm sure you have Tortillerias like we do in Houston. If you want corn tortillas, you can't beat them. Hot off the machine, the smell will drive you nuts on the way home. At my Tortilleria, they're 90 ¢ / pound (about 14 tortillas)
