Stuffed Quail

Took an old favorite of ours, stuffed quail or cornish and played. Used STUFFING OF couscous and quinoa with chutney, scallions and walnuts wrapped with bacon and served with yellow squash, zuccini and onions sauteed.
Ready for the small BGE, 350 indirect, carambola wood (star fruit) , 45 minutes.
Dinner is ready, The stuffing of couscous and quinoa was a great combination.

Looking good there Richard!! Where did you come across carombola wood? Purchase, or a friend did some pruning? We have caromolba here, and never even thought to use the trimmings for smoking. :blink: Quail look great.

Thanks . Answered a FREE Craigs List ad a few months back to pick up grove trimmings. Got some carambola and pecan. NICE flavor, like apple and guava SUAVE.

Very, very nice Rich!! Those quail look wonderfull. Back when I was a kid me and my Dad would follow a brace of Llewellyn Setters across the country side looking for there wild cousins. Not any left to chase any more. The saki sure sounds good in about a month. Got a bottle under the counter just waiting for a cool fall evening and the chemenia.
