pork loin stuffed with bourbon apples and pancetta

so we had the wife's best friend and husband over for her b-day last night (wife's best friend's b-day that is). ..decided to try something a little different....so i got a couple of nice chunks of pork loin (each about 8 inches long)....butterflied them out. ..seasoned both sides with DP pineapple head rub...made up a mixture of satued pancetta and shallots, removed them from the pan, then sauted about 3 chopped up apples in half a stick of butter with a good dose of DP pineapple rub (love the heat and sweet on the fruit). ..when the apples were tender, added back in the pancetta/shallots and then gave the whole a nice hit of bourbon and flamed off the alchol. ...laid that mixture on the pork loins, rolled them up and tied them...seared them direct at aroun 500 - 600 degrees on open flame for just a few minutes per side till browned ...then put the plate setter in and let them roast at 400 degrees dome temp for about 1 hour till done (i didn't have any apple juice, but i spritzed them with white wine about every 15 minutes just to keep the exteriors moist) . ...while that was going on i made another batch of the apple/pancetta/shallot mixture to top off the slices with ....whole thing was damn good!!

and topped with more of the bourbon apple/pancetta mixture....really worked well with the pork!

and with the dp pineapple head rub it was a great blend of flavors!

oh, and sydney made some killer choco desserts last nights ....some great chocolate cookies with melted andes mints in them, and an absolute killer flourless chocolate cake that we all agreed even tops her brownies!!!

    MMMM I am not sure what looks better... the pork and apples or the cake...... I have some ice cold milk here t work... so maybe the cake! LOL
  • LOL. ..julie, let me tell you, i'm not a milk drinker at all, but last night, even i had half a glass of milk with that chocolate cake, it was that dense and rich ....it really was THAT good!! . ..

    Beautiful stuff! I know where you can get some green chili to go in those apples! :woohoo: Looks like Spawn's desserts are a hit once again. Flourless? I think they call that a 4 pound, round Hershey Bar! :laugh:
  • i'll bet some green chili would have worked well in there too....and yeah, flourless...its actually a passover recipe...basically semisweet bakers chocolate, bakers unsweetened chocolate, sugar, butter and eggs. ...and she threw a couple of other things in there as well to 'enhance' the intensity of the chocolate (as if it needed it!!!)...thats it....

    and yeah, it was almost like a candy bar...the slices were pretty small, its all you needed, even in our house!!

    Max, I really like the idea of the apple and pancetta loin stuffing! :) Yum, yum, yum.

    Wow, Sydney really has a way with chocolate! :lol:
