Grass Fed Rib Eyes

I've got some grass fed rib eyes, about an inch thick. Any special tricks to this leaner beef? Thanks for the help, Dave in Plumas County

Salt and pepper well in advance. Let meat come to room temp before going on a very hot grill, 600+degrees. Cook 5-7 min on each side depending on how done you prefer. Turn it only once. Rest before serving and cutting.
You want go back to grain fed meat after this. The difference in taste, texture and nutrition is remarkable. No fancy rubs are needed on great meat. -

i wouldn't warm these up before cooking them. they are thin, and the leaner stuff cooks faster. simply sear to your liking and call them done. maybe til 130 internal and let them rest 10 minutes (if you like them med-rare)
