LOL Sorry Stike but after following that post I knew what I had to do with the all the ripe tomatoes when I got home tonight! no, none of this was on the egg so maybe I should have of topic in my header but there just was not room!

the raws :)cilantro is not in the pic but I used a ton of it.

every thing all chopped and mixed. YUMMY!!
I toasted the couscous and cooked the shrimp in a little EVO and then stirred into the couscous. Plated and poured some of the gazpacho over the top.

I have to keep the black olives separate... "HE" does not eat "gaskets" as he calls them. :S

plated with pan fried yellow squash with garlic. very good! thanks Jeff for the inspiration

Now there's a meal!! A lot of work but sure looks worth it. Got to use more shrimps though! Love the "raws" pic one of the chosen ones!

If you'll change the name to pico de gallo and substitute tostadas for the couscous, I might just give that a try !!! :laugh:__________________________________________Dripping Springs, Texas.Just west of Austintatious

Hey Gary, Neil is not a couscous guy. he does not like the feel of it. But he ate that and did not grumble once. plus I just said I was doing it over fine pasta and I think he was to tired to even notice. and he was hitting the gazpacho hard with a bag of scoops while I was doing dinner LOL

Julie, is is really possible for one to become 'lobstered out'? I have my doubts.
Innovative use of your gazpacho! You really should be more careful in selecting those you receive inspiration from....... -
