I've got my usual bread, cheesy casarole and straight up gilling for these. Anyone with their fav way want to share?

    I'll have to pay attention to this thread. So far, in more years of eating than I care to count, I've found that the best thing to do with squash or zucchini is to throw them in the compost pile. Open for suggestions though. :)

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Cut them in half length wise. Scoop out and discard seeds. scoop some of the meat and mix with LONEY pieces, sauteed onions, garlic, what ever you like, La Bomba, stove top stuffing or panko bread sprinkle with grated cheese and bake .. Loneyilisous my queen.

    The one I grew up with. Summer squash cassarole. Half moon slices, diced onion. Mom would boil these, I don't. An egg or two scrambled, depending on amount. Bunch of grated cheddar cheese, s/p and any other seasoning you want. Bake. I really like it!!

    Molly - I'll send you a squash casserole recipe that I like to use often. I usually make enough to freeze 4 or 5 casseroles with fresh summer squash....nothing better than fresh squash from the garden.

    I love squash fried with onions. I cut the squash up to the consistency of fried potatoes and add chopped onion. Usually about a 60/40 ratio. Pour a egg and milk solution over the veggies to get them wet and then dredge in a seasoned flour. Shake off the excess flour and fry in about 1/4 to 1/2 inch of oil (depends on the size of your skillet and the amount of squash you're cooking). The secret is to keep the oil hot, about 350 degrees. The result is a nice crispy, brown crust on the veggies. If you want you can add potatoes, sweet potatoes or green peppers to the mix. The potatoes make the dish more of a succotash.

    Not a big fan of stewed squash, but I really like them fried.

    Any road will take you there if you don't know where you're going.

    OHHHHHHHWEEEEEEEE too bad you don't live close, you could throw it all my way!!! I love it fried, grilled, saute'd. If you cut them in thin strips and coat em w/ seasoned flower w/ other kicks and fry em crispy.....man oh man they are great! Wrap em in foil after a little butter and your favorite season and grill em is great too!!! ;)

  • Yeah, we've had a few big-un's like those...been trying to catch them while they're still nice and small. Our go-to veggie side lately has been zukes and squash cut into cubes, sauteed with onion, and banana peppers. I mix it up by adding other flavorings (garlic, herbs, hotter peppers, a little honey for glaze, etc).

    Have you tried using a mandoline to make "noodles"?
