Death by Mac'n'cheese
Little Steven

Some little dancers staying over tonight. Figured their hearts were strong enough to take this.
Made a thick white sauce and loaded it up with sharp cheddar. Some par cooked #10 elbows.

Laid on some old cheddar slices.

Some fat absorbent panko on top with some dry chilis, Italian seasoning and dehydrated onion.

On to the egg.

Some shredded cheddar on top and then some more

A nice criss-cross pattern of cheese.

It was really cold but worth it

Beautiful sunset too.

Wow...awesome Steven...on all counts.
-
OMG! That looks SO good. How do you make the White sauce?
-
Hoss,
Standardw hite roux. Equal parts butter or oil and flour, cook the flour in melted butter til it smells like cooked pancakes/hotcakes and ad milk. Bring to a simmer until it's thick, add milk if it's too thick, add cayenne to taste . I usually hand break the cheese and leave some big chunks unmelted. You really want to end up with a semi thin sauce. To coat a spoon.
