I am trying to calibrate my dome thermometer, and I stuck it in a pan of boiling water. It only read to about 180. So, how do I get it set at 212? The little nut on the back won't turn, and I am afraid to break it.

So, now at room temp, it's saying 110. But it reads 212 when in water. So, I guess it's no big deal that the starting temp is off?

That's normal... as long as you have it set for boiling point...
I don't "clip" mine in the dome, I leave mine loose (with the clip attached to the stem) so I can pull it out of dome and check the dome temp with my thermopenKent Madison MS -
also..dont let the tip of the therm touch the metal of the pan while calibrating..it should only be in contact with the boiling water..

That's the kicker, flymed, you're only sure that it's correct when it's at or very near the 212* reference temperature you used to adjust it. I wouldn't trust it anything higher than 250*, myself. Get a Tel-Tru.

I agree with the advice to replace the BGE thermometer with a Tel-Tru. I went through two BGE thermometers within the first six weeks of owning my BGE. The Tel-Tru appears to be far more accurate and is easier to read. No more over cooked meat for me!
