wasted ribs...unbelieveable!

Today for the first time I went to a huge new Hy-Vee grocery store opened a couple weeks ago. As usual there were samples and tastes of various foods being served. I saw a line for baby back ribs so I decided why not...
I was amazed that the server - a middle aged woman - was carving the ribs by merely running her knife parallel length-wise to the rack of bones and simply removing the top layer of meat and then pitching the bones still firmly in tact with the meat holding them together! There were at least 7 such butchered racks in the trash! When I got up there I just blurted out - "you don't eat ribs do you?" and she replied - "no, I don't like them!"
I just shook my head and left.

Did you offer her a rib cutting lesson? Maybe she was doing it that way so she could give a small bite to the masses in order to sell precooked ribs. Doesn't work that well when you give a whole bone to each person and tank all the profits.

No I understand she couldn't give each person a bone, but I don't think you understand what she was doing - she was just fileting the top meat above the bones and throwing away the bones plus the meat - no meat between the bones was saved - just skimmed off the meat on top in long slices from one end to the other end.Re-gasketing the USA one yard at a time
