what do butchers do with the point of the first-cut briskets they sell? Is there another name for the "point cut" of the meat that can be purchased (and smoked - mmmmmmm!!) separately??

Sadly, most goes into the cheap burger.

Yep, it ends up in the 73/27 ground beef. One of the reasons that it makes tasty burgers.
