Our son's wedding is saturday so...........39 lbs of mustard slathered pork butt goodness is sweating in my large since 8:30 pm, had to remove the dome thermo to close the lid...gonna be a long night :side:

Do you get bark?

Yes, in the past (smaller) cooks I've gott'n very good bark....That is why my son requested pulled pork on the egg for his wedding
. We are eggspecting about 100 people so we have 20lbs of sloppy joe's and a bunch of sides also, I hope its going to be enough :unsure:. -

That's an interesting idea. I know I read before that some people put nothing on the butt at all and just put on the rub after the pull.
If I'm using a simple spice rub (like dizzy) maybe next time I will leave the outside nude, but butterfly it a few times and get rub inside and tie it all up. -
Sorry, No finished pics, My wife was at work with the camera phone when the butts came off. I filled the large to the top of the fire ring and after a fifteen hour cook I had almost half of the lump left :woohoo: so I was able to do a 600 degree clean burn after the cook.

So far that is all I've ever used on pork butts, the results are tasty with no over powering flavors (a few family members don't like heat or spice :( ). And you have NO mustard flavor at all, its crazy!
