Beer Can Chicken-Help!

Hi everyone-

I am getting ready for my third attempt at beer can chicken, and my previous efforts have not yeilded crispy skin...any suggestions?

    Drink the beer, toss the can and spatchcock the chicken.
    Rub the bird with a rub you like Dizzy Dust is great with chicken. Sprinkle a very light coating of corn starch over the bird, shake off excess and cook. If the chicken fat doesn't absorb into the cornstarch in some areas spray them lightly with olive oil.

    My $.02 is to raise the chicken up in the dome using a rack extender of some type. If you don't have an extender I'm sure you could rig something for the chicken stand to sit on.


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg. 

  • The secret to crispy chicken skin is getting the moisture out of the skin. You can try cornstarch, as has been suggested, but another way to really dry the skin is to put the bird in the refrigerator, uncovered, for 48 hours. The skin will dry and become transluscent.     Oil the skin before cooking and roast at a relatively high temperature such as 350-400 degrees.

    When the bird is done, serve asap, because the skin can start to reabsorb moisture from the meat and that will undo all your hard work. Good luck!

  • I agree with the Whiz. If you have time put your chicken on a tray uncovered breast side up in the fridge. Once the skin dries out it will become translucent then you are ready to go. Good luck.

    Thanks for the suggestion. Unfortunately I don't have 48 hours to refridge the chicken...will it still help if I can get it in there for 2 hours or so?

  • It probably won't make that big a difference for 2 hours. YOu might try the cornstarch thing. I've not tried it, but need to some day....
