Southwestern Soup

This is an easy dish, but has a distinct regional flavor. I like simmering it on the Egg with pecan wood chips because it infuses a nice smokey flavor to the soup.

1 lb. Beef, ground
1 cup Onion , coarsley chopped
2 cloves Garlic, minced
1 15 oz. can Pinto beans, rinsed
1 15 oz. can Kidney beans, rinsed
1 15 oz. can Black beans, rinsed
2 15 oz. can Rotel diced tomatoes, undrained
15 oz. Beef broth
2 cups Corn, frozen
1 envelope Taco mix
¼ teaspoon Salt
¼ teaspoon Pepper
2 tablespoons Coriander powder
2 tablespoons Cilantro, fresh chopped
1 12 oz. bottle Shiner Bock Beer
2 tablespoons Texas BBQ Rub
2 teaspoons Penzey's Southwest Seasoning
2 teaspoons cumin
1 cup Water

Brown the beef, garlic and onion in large pan or Dutch oven, stir in above ingredients, bring to boil, then simmer.

    Hi Gary, I had to copy that recipe to try later like Mickey. You are a heck of a man to cook in this heat ;) Cooking in the heat and packing heat...what a man!

    Please come to Plano. It is much smaller and we get to have more fun than cooking all day. Don't get me wrong there is food everywhere. In fact we had to give most of it to the people in the American Legion hall because we were all too full to eat anymore......it's a great, intimate, time to enjoy your egghead friends.
