Lot's of lessons learned.
The dough is swell.

Polidori sausage with cherry.

Rolled out.

Love the sauce, all natural. Thanks to Kari and Jon.

I thought the dough was rolled pretty thin. The dough was not fully cooked in the middle. Ended up rising during the cook. Maybe a hotter fire. Maybe it was the recipe. I'm pretty sure it wasn't me....
It was 500 when I put the pie on. Took about 20 min to cook. Also to much flour of the bottom of the pie. I wanted to cook the other half of the dough, but quite frankly I'm full.
Will this store well in the fridge or freezer?
It's a good day when you learn something new!!

Molly: Yes, the dough will store in the fridge for a few days. Just take it out with plenty of time to spare before using so it can warm up and rise again.
As you said, lots of lessons learned (and to be learned). Practice makes perfect, and you did very well!! Now you don't need to be 'skeered' of a pie... Nice job. -
Try to stretch the dough instead of rolling. You don't have to toss and spin, just let it hang over your arm or pull the edges while it sits on a table. You can put the uncooked dough in a bowl and roll it in a little coating of olive oil, cover tightly and store for days. I learned last nite at the Pgh fest that most pizzarias proof their dough for three days. Not to worry. And, it's only flour and water.

Wait... you ROLLED the dough? :woohoo: What happened to the pizza toss kit lessons?! Shame on you!!
Still, the pizza does look tasty. Glad you enjoyed it!I hate it when I go to the kitchen for food and all I find are ingredients!

It's so much easier to do this kind of stuff in the commercial kitchen. Not enough counter space here and cleaning up at work is easier.
It was fun to try this and get DOW off my back....KIDING!!!Molly

Outstanding. I learned so many things that folks are doing on their eggs. Keeping (proofing) dough was one of them. Everyone was helpful and friendly and generous. Some of us who communicated via email exchanged gifts. Another cook allowed me to use his egg the last hour to make a cake. So kind. I really bent everyone's ear. Now I am looking forward to Nieggara.

Hey Molly
To freeze I would wrap it well in plastic film so there is no air in contact with it. Then maybe in a layer of foil. Any air may cause the dough to dry out on the surface at that spot and it can be tough and crusty there when you defrost it.

Molly, looks great to me. Love the avocado on top!

Thanks Blair. I figured that as the frozen pre formed dough at work is the same.Molly

Great looking pizza, Molly. It looks like a left handed toss.

Thanks Teresa! It needed something green on it. I was tempted to chop up some kale but figured people would freak and quite frankly it was less prep in the heat.
Your cook last night looked spot on also!!Molly

Those are some good tips, PattO. I didn't know you could store the dough like that , and hanging it over your arm is something I'm going to try. Thanks
-
Molly, I was waiting on viewing your tossing pics!
Your pizza looks nice.
