dome temp differences

first overnight cook on new egg, bought a maverick redi chek smoker thermometer for peace of mind. i tested the smoker thermo with boiling water and it was right on. my question is this, during this entire cook, which is almost over (internal temp is 182) the smoker thermo and dome thermo have been different. sometimes the difference was 40+ degrees sometimes only a few. Anybody have any advice as to which temp i should go by? thanks in advance!

    Where was the pit probe from the maverick?
  • Heat rises! I pull the BGE thermo out of the egg and insert the Maverick probe during long cooks. Reading temps at the grate level can vary considerably because of heat wash around the platesetter or close proximity to cold meat. The dome temp location is much more stable.

    The maverick smoker probe was clipped to the grate, but it is on the edge of the grate, above the plate setter. maybe I am getting some "heat wash" around the plate setter. Started out the two temps matched up, but at the end of the cook, maverick reads 246 while the BGE reads 225. Where do y'all place the smoker probe?

    I also just bought a maverick. I have only used it a couple of times and not for anything more than two hours and indirect, but I noticed right away that the pit probe [placed on the grid and inside the platesetter] and the dome guage read exactly the same the entire time.
    I did not want to post anything until I had used it more and gained a better insight, but I thought I would add at least this much to your post and see what some of the eggsperts have to say.

    I use an alligator clip and attach the pit probe from the maverick to the stem of the dome thermometer.

    Are you using the stock BGE therm in the dome or a Tel-Tru? If BGE is it calibrated? It's just odd that they are the same temp.

    Hi Ripnem,
    Yes, it is the stock BGE Thermo, and I did check it for calibration and it is right on. I was cooking on a raised grid in the 350 range and getting the exact same readings on both probes. I am going to do a low & slow this week. I will see if that makes any difference :unsure:
