I am doing my first spatchcock chicken tonight. Family in from out of town. I could not find BBQers delight Orange Wood Pellets and don't have time to keep searching. Can I use Cherry wood chips instead? Do I put in foil packets on or off the fire? How much?

Just use the cherry wood (no foil) and DRY....
If chunks just a couple / if chips no more than a
    hand full.

I go direct and 350/400 high in the dome.

Forgot to add that I always use the cherry with chicken.
It gives it the good color....

What he said. Cherry chicks are awesome!! For some reason, leftovers seem a bit smokey the next day, but fresh off the grill, can't be beat. You'll just have to eat it all tonight! :)

I hate it when I go to the kitchen for food and all I find are ingredients!

Man I have to ask: Where did the picture come from?

I've posted it before. A while back, I marinated the thighs in Goya Criollo (thanks for the suggestion, Molly) and egged 'em with cherry smoke. Delish! The cherry gives great color!
