Personally, I would go with the whole if you're planning on smoking it. The trimmed, nose off if you're planning more of a wet cooking style. The Whole really melts after a long smoking, and the saved money, extra meat will pay itself back in dividends.

I assume you mean 7.0 and 5.0 else you are about to buy the briskets from Paul Bunyon's Blue OX.
Get the whole untrimmed briskets. You want the fat. -
It's 7, 10-12 pounders of untrimmed or 12 4-5 pounders of trimmed
