Pork shoulder: 2 small tied together?

Hi! First post here. I've had my Greed Egg since moving in my house 5 weeks ago and it is incredible. Can't wait to cook every day! This forum has been very helpful in those formative first cooks!

Anyway, on to the subject. I want to cook my first pulled pork. Went to the butcher to get the biggest one, but he only had two 5 pounders. He suggested tying then together and cook one big shoulder. But, I'm not shure. Should I untie them and cook as two seperate pieces of meat or let them tied together as one big pork shoulder?

    You mught want to cook them as they are, Tied together it could take up to twice the time.

    I would do them separate for two reasons...(1) less cook time & (2) more bark!

  • 5 lbs are on the low end, but should be fine, I would cook them separate myself.

    I've done 'em as small as 3.5-4# and they come out just fine!

    Thanks for the advice, I will definitely cook them not tied together. My concern was that I have a Medium Egg and I am not yet shure if they will fit perfectly. But they probably will.

    Now, for cooking time. I have read quite a bit about it over the last few days, on the forum and the different references I have found. Guests arrive at 4 tomorrow, we want to eat at 6 so I have to time this right! I will put it on at 10 tonight, 225 F. It gives 20 hours till 6 tomorrow. If everything goes well, it will be ready mid-afternoon tomorrow and I will use the foil/blanket/cooler tip until we eat.

    That's the plan.

    I would start them at 6:00 AM tomorrow.They should finish in 7.5-10 hrs.They can rest safely till 6:00PM tomorrow.20hrs would be plenty for 1(one)ten pounder ;) .Unless you want them for breakfast,don't start them tonight :)

    Makes sense.

    I just checked with the 10 lb bag of pork and I am in doupt that they will fit side by side in my medium. What if I keep them tied together? 15-20 hrs?

    Put them side by side and they will shrink. Plan on at most 10 hours, but start checking the internal temp at 7.5 hours.

    Do NOT tie them together. Trust me I regularly stuff my large eggs with 6 butts. I have no doubt you'll get two in a medium.

    I agree with Pete...don't tie them together...when I had a medium I regularly did 2 8#'ers and quite often three of them so those two little ones should be just fine!

    Ok, here is an update. I followed the advice to cook them seperatly and they fitted very well on my medium. I followd the Elder Ward method I found on naked whiz to build the fire. Cleaned everything up and started the Egg at around midnight yesterday and by 1.30 AM I had everything stabilized at 215-225 for the over night cook.
    It is now 10 AM and the meat temp is slowly rising. Currently at 171 with the Egg very stable at 225. The smell in the neighbourhood is incredible! Can't wait to eat. It will probably be ready in advance, but it's better than too late!
