    Thanks will try...probably sub the Mayo with Veganaise though ;)

    I have never seen that specific recipe, but the addition of the vinegar and oil is interesting and similar to what we do.

    We add about 1/4 cup Italian Salad dressing to the diced potatoes, before adding the other ingredients.

    It adds a nice flavor and the mayo does not tend to soak into the potatoes so much.

    We prefer the consistency of boiling the potatoes in the skins.

    I use scrubbed, red, or new potatoes, with the skin on. Makes for a culinary delight!
