Brunch cookout

I am planning a brunch made on the egg. Any suggestions? What kind of eggs do well on the egg. I'm thinking of eggs in onion or tomato cups made in a cupcake pan. Maybe a lightly smoked sausage grilled in a coil. What else? Or, old fashioned steak and eggs, if I can figure out eggs. Cornbread? HELP.

Quiche sounds good. How did you do it?
Also, what's your technique for omelets? I like omelets for a crowd with the fixings in small bowls for them to add to suit.

What would you build around a herb encrusted filet for a brunch menu? I've made these filets before but for a later afternoon party. I use most of the herbs in my garden processed with oil and garlic then spread all over the filet. Roll in plastic wrap then foil and refrigerate for two days. Wow. But on the egg? And with what, maybe cheese biscuits? Something brunchy.

Biscuits and gravy?
With the fish dish I agree that some cheese biscuits would be great, I like the recipe on the Bisquick box for cheddar bay biscuits. Simple tomato and mozzarella salad with a simple vinaigrette.
Fruit pancakes or crepes on a CI griddle on the egg. Melon salad, just chopped up melons with a little kosher salt. Sausage rolls, breakfast pizza.

I made a great fatty/french toast breakfast sandwich on the Egg and topped it with a maple syrup compound butter. That was really good but you'll need a griddle plate or cast iron pan for the french toast.
If you only have one Egg, you could start ahead by baking one of those breakfast casseroles or a strata on the Egg. The casserole dish should keep it warm and then you could switch to direct heat to do some faster dishes.
You could grill up some veggies and set up a little breakfast burrito "bar" letting guests pick their ingredients, assemble the burrito and toss it on the egg for just 30 seconds a side to finish off.Knoxville, TN
