If they are fairly small, like those sold at Costco, I just sear them at a high temp, then bring them in to rest for about 10 minutes, for rare to med rare. If you like them med-well or they are larger, I would take them off after the sear, shut down all vents and put them back on to roast for a few minutes when the temp gets to around 350.

I cooked a lamb steak the other day and cooked it like a steak and left it bloody about 350 fer 10 min. Publix usually has a good selection of lamb.... :woohoo:Hunting-Fishing-Cookin' on my EGG! Nothing else compares!
