I have a pretty big spatula, but the fish always broke apart when I tried to flip it. Now, I don't bother flipping any more. I cook fish indirect and high in the dome. No more flipping. I put in on and then just take it off when it is done. It comes out great every time and never breaks apart.

A very thin and sharp professional spatula. When to turn is the real question. Putting the fish on at the right temp and not messing with it until it sears and doesn't overcook is just as important as what to turn it with. I am no expert its just what I have learned by trial and error.

Spatula under, hand on top, and a gentle roll-over.
If it still breaks, your piece might be too big.
Happy flippin!

I use a Bakers and Chefs brand spatula that has a 6 or 7" long flat piece. Got it from Sam's Wholesale for dirt cheap.Knoxville, TN

I don't turn fish. If I did, all my pretty stuff would fall off.

Okay....I do turn it when I pan fry it, then I just use tongs. Heheee.

As above from WessB, a big crosswise spatula.Work great not just with fish, but can even ease out a butt getting gelatinous. Useful for many things.

I'll second that Jason, thirdeye, they all look awesome! I'm drooling buckets.

Hi Jason
I have the Weber set . . .
The BIG spatula, 2nd in with the beveled edge will double as a canoe paddle and lift Boston Butts with no problem, it is their fish turner. All are heavy gauge stainless and if I recall are all about 16" long. I wish they made a spoon to match. Now if I could afford some fish. :(
The three on the left came as a set from Home Depot and the two big spatulas were found at Bass Pro Shop individually.
