Stuffed Pork Roulade

I have to say this was delicious. I have done something similar to this before but the EGG makes it so much better! :woohoo:

Pork Loin butterflied!

Stuff I stuffed it with: Cranberry Salsa, Feta Cheese, Applewood Smoked Bacon, Yellow Bell Peppers, Red Onion hidden under the Bacon.

Ready to Roll!

Rolled Up.

On the EGG with some Baby Reds.

Zukes with EVOO and DP Shakin the Tree!

All Plated up, cut up the potatoes and tossed with Butter, Garlic and Baby Dill!! I do have to work on my camera skills.
I think this was one of my favorite cooks thus far on the EGG!!!!

Looks like it came out good Jason. What temp did you pull it at? I have one in the fridge for tomorrow

I pulled it at 140 and rested it for 15 minutes. When I sliced it i almost thought it was going to be dry but it wasnt even close to being dry. It was a big hit. -
That's a nice dinner Jason.
The Pork Roulade always seems to be a hit. -
