Sugar Maple Wood Smoke
Marine

Anyone used Sugar Maple Wood for smoking? If so, for what and how was it? I wanted to get some wood I saw on ebay and was wondering what kinds to get me started and Sugar Maple was one of them. I was thinking Apple also and another.

Apple, no doubt, and I'm a lifelong Texan. The first tree I could reliably identify was a mesquite tree.
Mesquite is good in small amounts for grilling.
I'm still experimenting but my wife, who hates smoked foods, had no problem with apple wood-smoke ribs and chicken I made this weekend.

Sugar Maple is great on poultry, especially with a maple infused rub like Raging River. It also very good on ham and the stronger fishes like Salmon.

Maple is what we have used on our Thanksgiving turkey for a number of years.

I have used maple for salmon and also turkey. Apple, I don't remember what, been too long. Cherry is my favorite for chicken. So many woods, so many recipies.

Is there a difference between SUGAR maple and the maple chunks I bought from Cabelas?

I use maple (deadfall from the trees in my yard - no idea which varieties). Have tried it on lots of things (burgers, steaks, chicken, pork chops) and haven't been disappointed. It's actually one of my favorites. My stash also includes Dogwood (more deadfall or prunings), Apple, Cherry, Alder, Hickory and Mesquite.
I hate it when I go to the kitchen for food and all I find are ingredients!

Perhaps, but not enough to matter. Many types of maple out there.
