I've been meaning to ask this for about 30 years..

What kind of sugar do they use on pastries where they put a wash on the pastry and then sprinkle on this sugar that consists of gigantic crystals? I think they use them on some of the Danish butter cookies, too.

When we had the grocery store, I think it was just large white sugar crystals. I think they might have clear to. My neice has a small bakery, I will ask her.

You can always make your own, we did it as kids - it does take time though (days). I would think there would be ton's of hits on google.

I don't mean rock candy, that's too big, :-) But I did find a source or two on Amazon of what looks like what I am after. Mike was right, they call it crystal sugar. I think adding "decorative" to the search argument got it.The Naked Whiz

If you just need a small quantity, you could make "rock candy" then crush it.

Oh well. You're right - the color in the pic is pretty accurate. Not at all white. Sweet though.

if you cant find it locally check the area where they sell margarita salt, usually there is the larger sugar crystals for rimming glasses, i bought mint sugar a week ago and i assume they have plain as well, cant see there would be much differencefukahwee maineyou can lead a fish to water but you can not make him drink it

Seasonally, KA has colored coarse sugar, too. The seasonal colors often go on sale after each holiday.

My better half buys decorative sugar for pastries at Wal-Mart in the craft section. Look for cake decorating supplies. I think the brand is Wilton.
