Molly was very kind to send some amazing apricot chunks something you could never get here......the bag reads "Just like biting into a juicy sweet apricot just off the tree".....& believe me this is the best chicken I've had..............soft, juicy & full of flavour......Spatchcoked, rubbed with EVOO, mustard & DP's Swamp Venom Hot Deep South BBQ Seasoning & in the fridge........But first, Fired the large 400* Dome.......
Waiting for the egg to stabilize..........................it's been so hot we had a swim first.....the water splash was me ...sorry couldn't get to the pic in time..............................................

Raised Grid, Indirect, Drip Pan just 1 hr. .....................................

What kind of Lump do you use ? I see a lot of Mesquite coming from Mexico. So are there other types of Lump ?
Also, from what I see there is no need to fill lump up to the top of Fire Box ? I seem to put too much in.
Sorry it is too hot there. We are having a warm spell here too in So. Calif..

Gary I always use 100% mexican mezquite & the brand is Carbonera Rodriguez, sure it's very local but they pack pretty big chunks which last a long time & burn evenly...This time I used some apricot chunks for smoke, made in Colorado USA & sent to me by a dear friend from this forum

I always show the your pictures to my wife. I like the house and views as much as I do the food cooks.
I said look at Beli's view from the pool level (first time I have seen that view).
She looked at am and said there is one consolation is he is cooking on the same egg as you are. I just started laughing. I said we could move, I am sure there is some property there somewhere. She looked at me and said she would visit often as she isn't leaving the grand kids.
Thanks for posting the pictures of the food and the view.
One day I would love to see the monarch migration first hand.

Hi there Kent, suppose first time it was so hot I thought twice about going upstairs so just took this pics down there,it's 7:00 pm now & still 98* so I'm ready for another dip in the water....monarchs come this way every october & stay at this hotel :P so you & your wife are most welcome
