attempted pork shoulder.....

Last night I put an 8 lbs pork shoulder in at 10pm it is currently 8 am. My fire went out last night. Checked he temp of the meat and it was 185. Is it still safe to eat? I don't want to make everyone sick. It is currently in the oven at 230 due to a TORRENTIAL DOWNPOUR of rain in which I cant get the egg fired up. needless to say I am not happy

    Thr fire must not have been out long if it is at 185 - the meat is fine.

    Assuming you want it ready to eat around noon, I would leave it in the oven till it hits 200-205. Then foil and rest in an ice chest under several layers of newspaper or towels for until you are ready to pull.

    Collateral benefit - your ice chest will smell great for several days :)

    Hey Phish, 10 hours seems a little quick to get an 8lb butt up to 185, but I guess it depends on your cooking temp.

    Hopefully the oven will help you finish it off in time for serving.
