Sweet Cornbread recipe

The basic recipe came off the side of a Albers Corn Meal box. Earlier in the week I had purchased one too many mangoes and one too many ears of white corn on the cob. So, I diced the mango and cut the fresh corn off the cob and added it to the following recipe:



1 1/2 C all-purpose flour
2/3 C granulated sugar
1/2 C white corn meal
1 T baking powder
1/2 tsp salt
1 1/4 C milk
2 Large eggs
1/3 C vegetable oil
3 T butter, melted

Preheat oven to 350°F. I put it in a CI skillet 10".

Combine dry ingredients in a medium bowl. Wet ingredients in na small bowl and mix slightly. Add wet to dry incorporate just until blended. Add mango and corn. Pour into buttered heated skillet.

Bake for 25 mintes or check with a skewer or toothpick comes out clean


The result disappeared.
