Smoked Scallops

Has anyone tried smoking sea scallops? Found a recipe from 2007 that called for 4 hrs. That seems excessive. Does anyone else have any suggestions?

I would guess that 4 hours is a very long time. Why not try indirect 250f and sample until you are happy. I would use a wood like apple, peach or some other soft flavor. Maybe marinating in soy will enhance the flavor. Like shrimp, I would think overcooked is tuff.

I agree with Richard. FYI, my Shrimp & scallops posted above took just 15 minites at 300 direct. They were smoked with just a few hickory chips. They were done, for sure. Scott

I have grilled them in a ci skillet in butter and they were fantastic. I got the idea from Florida Grillin Girl. Here is a pic.

We used to "pan smoke" them in the restaurant all the time. Just enough to get a smokey flavor - 20 minutes perhaps.
Most shellfish are smoke sponges so it's easy to overdo it. Try adding the smoked scallops to a clam chowder - it adds amazing flavor. -
Smoked this morning indirect with cherry and an ice pan at 150. They are now wrapped in bacon and I will finish on the gasser as Iv'e got two pork tenderloins on the egg. Will let you know how they turn out.
