Easy Sun Dried Tomato Pesto Chicken

I tried something different when I spatchcocked a bird this weekend. And it was EASY.
After an 8 hour soak in buttermilk from a local dairy, I rubbed some store bought (Classico brand, most stores carry it) Sun Dried Tomato Pesto over and under the skin. I hit it with some Poultry Perfect Rub (any poultry rub will do) and pepper and cooked it like normal.

Served it on top of some traditional basil pesto and pasta.

It was enjoyed by the whole family. The pesto brought a lot of flavor, color and texture to the chicken. Definitely worth a repeat. Especially since it was so easy!

The enzymes and acids in buttermilk help tenderize the chicken and they give it kind of a "tangy" taste.Knoxville, TN
