To Mustard or Not to Mustard Eggsperiment Results

OK so I decided to do a side by side BUTT low and slow. One rubbed with mustard and one without! Here is how it went.
Butts ready to be rubbed!

Butts Rubbed One on right with Mustard one on Left without. One with was slightly smaller.

On the EGG at 2230 (10:30pm) 225 Grid, 250 Dome. Alarms set on ET-73.

Ready to be pulled at 1430 (2:30pm) 200 internal temp.

After resting in foil in cooler.

Pulled, I apologize only showing one pulled, Camera died before I could take the last picture.

Now I can say the results were inconclusive! The Bark, tenderness, moistness and flavor was Identical on both Butts. I had a three family member panel do a blind Taste test and none could tell the difference. I could'nt either. The only advantage I could see with mustard was the rub stuck a little better. These were both wrapped seperately in Saran Wrap and placed in the fridge the night before the cook (24 hours). This was a fun eggsperiment, thanks for looking!

Charger...I completely concur. The only reason we have used mustard (and granted, it isn't a ton of it!) is to help the rub stick. And agreed, there is no influence on flavor, tenderness, etc. Great experiment, and thanks for posting it for everyone.

I really appreciate comparisons such as these. There are a lot of myths in cooking. Good to see this one busted!

Really, I have never had any issue with rub not adhering to the meat. I just don't get it. -

If the rub stuck better - shouldn't there be more flavour?

RGBHV, The amount of rub that did not stick was pretty small in relation to the amnount that stuck, plus I wrap mine and refridgerate before cooking then lightly dust again so It really wound up being the same amount of rub.

I did evil things with glue!
As soon as I figure out how to light and stabilize my Egg, get a guru, v-rack, tel-tru, extra foil, store bought rub, and bear claws, I will attempt a butt cook and let you know.

Ron, you really can come across as an ass sometimes to people that are new or experimenting with different things egg related and I don't even want to know what you were doing with the glue.

I have never noticed a difference with or without mustard. BTW that is the only use I have found for mustard.

I love me a good Nathan's dog with some cheap yellow mustard, or a smoked turkey sandwhich with some stoned ground mustard.

I mustard my ribs but not my butts.
Try injecting your butt next time. -
I tried it once a long time ago even though I could pretty much predict the outcome. Once was enough. I think the whole concept of 'mustardizing' a chunk of meat is a ploy to sell more mustard. Wonder how many tons of mustard has been spread on butts and ribs and everything in between over the years?
When you can't sell enough bread because it causes weight gain, sell it as a diet product.

My last 2 butt eggsperiment was with 2 different rubs, but they were pretty close in ingredients. Very little noticeable difference with one just a little spicier than the other. Once you got'em on a bun with some sauce they were identical.

My take on the mustard and I mean I put mustard on the meat like icing on a cake, was for a better bark affect. You could put tabasco sauce on the outside and wont taste it inside.

ME, after all is said and done, I will probably use up what I got cause I don't much use plain yellow mustard for much else and go naked from now on. :ohmy:

I tried mustard on ribs 1 time and could not taste the mustard, I could see no difference in the taste or texture....just my .02Hunting-Fishing-Cookin' on my EGG! Nothing else compares!
