multiple crumpetzzas & some thanks

I wanted to make something new & different this weekend, & what I had in mind was a rack of lamb, which I’ve never done. I had forgotten that we had a bunch of stuff going on so I never had the time to go to the store & get it all together, so I went with a cook I could bang out with stuff we had in the house. Pizza season is officially over in the hut, but I had a little bit of shredded mozzarella left from the last round of pies, along with some other ingredients so I figured I’d use it all up. Still wanted something different so rather than making regular pizza dough, I made a batch of crumpet batter & gave it a go:
First, make a batch of flat crumpets in a cast iron pan & cool on a rack:


To make the pies, reconfigure the egg to go indirect (because the dough is already cooked), put the cast iron pan back in & put your pie in.
First pie, chicken with bbq sauce for the boy:



Next pie, my favorite, caramelized onion & fresh sage. This also had Asiago:





Next, Ro-Tel with mozzarella:



Next, pepperoni with more Ro-Tel (first time I’ve had this stuff, it is excellent):


Next, the pie that stole the show, & a special thanks to Ginny & Kim, I’ve been saving this little jar of sweet pickled jalapenos since Atlanta for just the right occasion, & this was it, added to mozzarella & Asiago – it was spectacular, my wife particularly enjoyed it, declaring “you need to either learn how to make this or find a source to get it” :evil: :



Finally, I had one last crumpet & a little mozzarella left, so I did a plain salt & pepper with olive oil:
