I cooked some'en:Split breast w/pineapple&jerk

Since we have been eating so bad lately wife picked up some split chicken breast to do after church yesterday. These things were huge. Really to big as the only draw back were they were tough but the flavor was great. First the raws:

Wife had all ready got them soaking in a single serve can of pineapple juice, 3/4 cup brown sugar and 1/2 cup terrikie marinade. Not a big chicken breast fan and wanted a little flavor to "cover up" the dullness of them. Made me a jerk rub up of 1 tablespoon sugar and peprekia and roughly 1/2 tablespoon each of cracked pepper,salt,dried thime,powder onion,cinnimon,nutmeg,all spice and last but not least ADP pepper peprekia bill made me year before last. Ya'll may remember the Caribbean red peppers I sent him that almost killed him. He smoked and dried them sending back in nice little jars. These things have a half life of like Iridium. I had no intentions of the wife eating the three I did up for me. Hers I left just in marinade. Also cut slits in mine about times and stuffed with garlic clove slices.

On the Egg indirect with presimmin wood at 275 till internal temp of 140 solid.


The "cat in the cage", Andy, was enjoying a good stretch while supper was cooking! :laugh:

Grilled some pineapple slices and some bread up real quick with a fresh baked sweet potatoe and Jakes ready check it out! :laugh:


Got to get to work by 4am :pinch: Hope its a good one for all considering Monday!

i am surprised [i really should not be] that the paprika was still good..
all that hot sauce from 6 plants last year. should be lots of sauce and a fresh batch of persimmon smoked adp paprika this year.. got about 20 seedlings.

JL, I beg to quarrel. To quote you, "Since we have been eating so bad lately ......". From your previous posts, I don't recall that you've ever eaten badly. Looks like everything you cook on your eggs is awesome, including your chicken with pineapple & jerk!

bill, nice nursery! Be sure and save some smoked paprika for this Hungarian.

Speaking of nurseries. I was in the nursery yesterday and saw a beautiful yellow rose named Ch-Ching. lol. -
Nice Crispy skin there JL. We have been getting those huge breasts here too, pretty unbelivable how big they are. I have started cutting them down some.

certainly but beware,, this is persimmon smoked ADP's
[adp = arkansas death pepper] these are carribean red var. of habenero. hotter than all but the naga [or baht]jalokia.
i dipped some fresh ones in chocolate and mailed them to zippy and jl..
zippy sweat thru a shirt and sport jacket and jl had hallucinations..

Wow, that stuff is :evil: . Think I'll renege on that paprika request.
Maybe JL was just hallucinating from that wormwood stuff. As for Zippy, I think he should just sue his supplier, lol.
