Week 3 with the BGE: brisket

Okay, let's see how my first picture post goes...

Here she is, 5 lbs and way too trimmed, but rubbed and ready at midnight the night before...

Nine hours in, she's lookin' good. I'd like to point your attention to the pool of juice sitting in the low spot of the brisket at the top of the picture. I've never had moisture retention like that before the Egg. I woke up after six hours of sleep and the temp was three degrees different than when I went to bed. That's just awesome. Still using my complementary bag of BGE lump, with some Hickory chips mixed in...

I know everyone here knows what one looks like, but here's my egg, smoking away, nestled between a planter and some bushes, right outside the patio door where my dog sleeps, lest anyone try to steal her away during the night...

Okay, time for a rest after 15 hours at about 215...

Beyond fork-tender. This brisket could only be sliced with a razor-sharp knife, which, as you see here, I didn't have, because it just fell apart. Served with biscuits and chipotle black beans. It was a big hit! Sorry I didn't get a better picture of the center slices and smoke ring...

And now my favorite part, the next morning. Here's a big pan of hash made from the leftovers. Plated with a couple eggs, sunny-side-up. Wow...

All in all, a pretty nice little weekend!
