Pilgrimage to Loney Mecca

For all you loney lovers out there……..I recently made a pilgrimage to the Baloney mecca, Bologna, Italy. When I told our cooking instructor that I needed photos of baloney / mortadello to show my BBQ forum, she was appalled. She stated that mortadello was not made with inferior cuts of meat, but had quite a bit of fat added to achieve the smooth and silky texture. She said Bologna got a bad rap because of American Baloney.

Well, on with my tribute to loney (mortadella)…..

P.S. Some loney on our picnic plate with some bresaola, salami,parmesan-reggiano and pecorino cheese, pesto, Pulgian Bread (and a very inferior porchetta sandwich which we pitched) in Florence in the Piazza Santa Cruce on market day.
