ribs; to mustard or not to mustard??

Howdy all! So my ribs, I like the taste of 'em with my rub. But I was thinking about how so many people always slather the mustard onto theirs prior to putting them on; does this add to meat tenderness or anything? Is it a taste additive? I don't like mustard straight up, but if it doesn't add too much taste but a world of juiciness to the end result, I'd be game. Just wondering, I'm doing a batch this weekend maybe and have been thinking about trying something new, after all, variety is the spice of life. thanks all!

    I did half and half one time and no one could tell the difference so now I skip it and just do a rub

    I believe people (myself included) use mustard to help keep the rub on. I do not believe it adds any taste or tenderness. B)

    Mustard is for Hotdogs and Turkey Sandwhiches. ;)

    I've never had any issues with Rub not sticking to the meat, on any meat Ive ever cooked. I've never used mustard or anything else besides dry rub on Q prior to smoking it.

    I may be wrong, but I think using mustard is more popular in the Eastern U.S. I have never used it, but I've read that it doesn't add any mustard taste.

    I use worcestershire sauce. Dry rub would tend not to stick, so mustard and worcestershire help the rub stick to the meat. I make a paste out of the worcestershire and rub and then put it on.

    I've done it both ways. The mustard does help hold the rub on and adds a little moisture. You really can't taste the mustard once it has set overnight. If I have time I'll do it, but it's not a deal/meal breaker.

    after using mustard and not noticing any difference whatsoever I stopped using it, seems like a waste of perfectly good mustard ;) I agree with Bacchus, mustard is for hot dogs not ribs
  • Try it yourself. Do half a rack with mustard and the other half without.

    Can you tell any difference?

    Which did you prefer.

    Just rub, It is called rub because you rub it in. No mustard.

    I mustard my ribs. Helps hold the rub and creates a better bark. Try with & w/o and you make the call.

    LOL Just my way of doing it at home. I heard the vinegar starts to break down the fat. Helps hold the rub on. Adds no flavor. Just an opinion, gives a better bark. Any way you get good ribs is great in my book.

    A lot of people say it holds the rub on better. I've never had a problem with just putting the rub on my ribs. It seems to soak it in with no problem. :) I always thought it made the ribs taste better but I can't tell the difference.

    I cooked 2 pork butts, side by side, one with yeller mustard and the other without. The consensus here (local 'coons) favored no mustard. 8 - ) Thay said, I have nothing against mustard, and if you've never tried racks of lamb ribs slathered with the Country Dijon variety, you're missing out on a real treat!

    It depends on how lazy the dog feels that day. But 90% of the time I use mustard.

    i like the mustard, i put as much rub on that will stick, then work in the mustard, and then i put a different rub lightly over it, usually a hotter rub. seems to get more bark with the extra rub and mustard.

    I will have tp agree with Fishlessman, I have done both and prefer the bark on th emustard ones. That is not to say they weren't both great! It's all about how you likem! :)
