i wish i had taken some pictures, but i was too pi$$ed off.....
i bought a couple lbs of meat yesterday, one pound of extra lean ground mean and one pound of "meatball mix" (beef, veal, pork) to make some hamburgers.
i used a little worschesteshire sauce, salt, pepper, dp dizzy dust and worked it all together. made me some hamburger "balls" and set them aside to get the grill going.
the grill gets hot....
i carried the burgers out to the flaming hot grill and threw the hamburger balls onto the grill and flattened them out with a big spatula.
*wrong answer*
i was like, "those burgers don't look near as big as i thought they would be?"....
i let them cook about four or five minutes and decided to check the bottom of the burger.
*oh, snap hook*
you can't push a burger down and flatten it out on a ceramic grate. i probably lost about a third of the meat trying to flip the burgers as i had pushed half the beef below the grate level.
a grate is not a flat top and just because they flatten them out on the food network, doesn't mean you can do it at home on your egg (without the half moon thingy).

oh, the burgers still tasted good, but not photo worthy.

Sometimes the “STUFF” on TV only works on TV.
Flatten them first and put a dimple in the middle too. Then, slap them on the grate! -

Always mold your patties to cooking size, never squish your patties to flatten them.

I said to my wife, 'Where do you want to go for our anniversary?' She said, 'I want to go somewhere I've never been before.' I said, 'Try the kitchen.'

I have always, pre-BGE and now, incorporated a raw egg and cracker crumbs (I just grind them together with my hands) into the ground beef to bind the patties, really helps hold them together. Works well for me --
