Recipe Help - Vindaloo

Anyone have a killer vindaloo recipe they would share? I know Little Steven cooks some mean Indian food.
I'm looking for something a bit beyond the simple recipes I have found on various web sites. Slow cook, smoke, etc. are benefits. Looking to be more savory than hot. The wife isn't nuts about food that packs too much of a wallop.
Any suggestions? I want to keep the main meat chicken. I don't think I can get goat past the wife's discerning palate.

I flipped through my Cooks Illustrated Best International Recipe book hoping there would be a recipe, but no luck. I really got into Indian food about a year and a half ago and absolutely love it, so it would be great to hear if you had any luck. I liked my lamb vindaloo very much when I tried it, but I'm still pretty partial to my chicken tikka masala. Have you ever made that? The book I mentioned above has a pretty good recipe, and wouldn't mind transcribing to you if you were interested.

have played with the penzeys seasoning, its HOT :laugh: lots of rice and bread to tone it down. do a search on pork vindalho, i think that would be better than the chicken. i believe they start with a vinegar marinade similar to the portuguese Vinha d' Alhos.fukahwee maineyou can lead a fish to water but you can not make him drink it
