Couple of casseroles...

Morning All:
Last night and tonight was "casserole" night. Yesterday was an old family favorite called Mexican Casserole. It uses ground beef, shredded cheddar cheese, Ranch Style beans, Rotel, Doritos and cream of chicken soup. Basically a layer of Doritos, then ground beef, then bean, then cheddar cheese, then another layer of Doritos. Mix the Rotel & soup together and pour over the top. Here it is ready for the Egg...

After baking at 350 for an hour...

And plated, ready to dig into...

A very easy, simple, tasty meal. EggHatter put it together during her lunch break and I Egged it once I got home yesterday evening.
Tonight was noodle, ham & Alfredo sauce. EggHatter diced up the ham leftover from Wednesay, cooked the noodles, mixed it all together in a casserole dish and topped with bacon bits. Just put it on the Egg...

After about 20 minutes at 375...

Ready to eat!

Another easy, simple, tasty meal to use up some leftovers.

The first one looks like one my mom used to make. My dad loved it. That was tuna caserole at our house.......ate it til it came out my ears.....but those pics makes me kinda want it. I'll have to ask mom tomorrow for the recipe to see if it is more or less what you made.

Those look great! Casseroles are my favorite dinner. I will be trying the Dorito this week for sure!
