Take & Bake Pizza

I'll be trying pizza for the first time on our Large BGE. I'm starting off with 2 take & bakes from Walmart. Should I cook at 425 like the pizza box says, or go at a higher temp? I have a plate setter, but no pizza stone. Our BGE dealer had said he just uses the plate setter and doesn't mess with a stone. If I go with the 425 temp, do I still have to let it preheat for the 30 minutes as other posts have suggested? Any suggestions are appreciated!

You could go a little bit higher than 425 (dome temp on an indirect cook is usually a little higher than the temp at grid level), but probably not too much. Most of us (there are a few exceptions) would not recommend cooking directly on the plate setter. It often gets too hot to bake on, and will burn the crust of your pizza. For a take-n-bake that comes in its own cooking-tray, I'd use the plate setter, legs up, with the cooking grid on top, and just put the pizza in it's tray right on the grid.

I don't think the pizzas came witha tray. Would putting the grid over the plate setter help?

you could try just putting it on the grid, it would be that same as if you were to cook a pizza in your oven directly on the rack! Good luck! Hope your pizzas turn out great!

If it's stiff, like a frozen pizza, you can just put it on the grid, no tray. Otherwise, do you have a pizza pan? Usually, a take and bake pizza has its own baking tray.

at whatever temp you choose to bake at, you definitely want your egg to preheat for awhile until all the bad smoke has cleared

I did something similar this weekend using a plate setter with an actual pizza stone (http://www.fredsmusicandbbq.com/16_DELUXE_ROUND_PIZZA_STONE_FROM_OLD_STONE_COMPAN_p/old4462.htm). I preheated and cooked at ~450 for approximately 20 minutes. Nice hint of smoke but wasn't overpowering. You should be just fine with putting the pizza on a grid or a baking sheet. Also keep in mind that this pizza stone I purchased is designed for high heat cooks - you can get away with a much cheaper stone if you're only doing < 450*.

To answer the temperature question, I'd advise you to follow the instructions on the box. If it says 425, then 425 it is. After your first pie or two, you can see if you think you need to change things.The Naked Whiz
