Yesterday afternoon Little Steven and I got into a discussion regarding soaking chicken in buttermilk. He did some and posted yesterday. Ironically, I had just been reading about that very thing in a new magazine that Mama recently bought. As the discussion progressed, we discovered we were both reading the same magazine that we both kept in our "libraries".
I know everyone has their own favorite chicken recipes, but this book is packed with a lot of interesting stuff. I, and I'm sure Steve, recommend it for relaxed reading.

I didn't see the discussion but what was the conclusion. I've always wondered about soaking in buttermilk. Does it really affect the outcome. Don't know how the buttermilk could possible permeate through the skin.

Mike I remember my Mother always soaking in buttermilk her fried chicken.
Are you talking about doing it to smoked?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
Mike, I read Steve's post and your replies. Cindy subscribes to the magazine but, I do not see that particular cover in her collection. I will have to delve deeper into this oddity. Tim :ohmy:

Thanks Anne, Cindy and I are just fine. We had a lot of rain and flooding our area. Nashville and Clarksville are underwater. :( We live 60 miles Northeast of Nashville in a town called Lafayette, Tn. We had minimal water get in our basement and it's already cleaned up and we had some water get in our garage and that is cleaned up as well with no damage to us. Thank God. Tim

We did, and you were sorely missed. Your fraternal twin (separated at birth), was pretty bummed that you weren't there. Also, lots of questions about your stuff. Actually, Ultimate Chicken is Leroy at the afterparties.

I do have my eye on one recipe...Chicken Hash Brown Tostadas...gotta figure out the best way to Egg it.

Tom, I don't know if you subscribed to this post but, I do want to say since I recently got the AR from you with the rig that goes on top for cooking high in the dome I quite cooking chicken indirect. Now it is direct high in the dome. Tim
