I've been working towards perfecting my ABT's, having come up with a good spice blend including a little sugar to help crisp and flavor the bacon. I have all but decided the bacon is plenty of protein, and have made the last few batches with cream cheese as the only filling. They are pretty darn good.
Was trying to think of some unique ingredients to mix with the cream cheese, aside from meats. Needs to be something of substantial flavor to stand up to everything else going on right.... I was thinking goat cheese maybe. Perhaps a small amount of fruit like chopped chopped dates?
Any ideas or thoughts would be appreciated.

How about some capers, artichoke hearts pickled, crab or shrimp?
-
The artichoke heart idea has alot of potential, thanks Richard!

Here's another angle - ever hear of Wind & Willow brand of cheeseball mixes? They are extremely good and does magic to cream cheese. This winter I mixed up a cheeseball using their white chocolate amaretto mix and it was terrific. At the time I couldn't locate any decent jalapenos to make a large enough batch but the two I did have told me there's real potential there. BTW they make a variety of mixes which may float your boat!

They come in a distintive triangular package.

Ron,
I have been skipping meats in the filling, and have been using a sweet, hot, fruity dip in a jar mixed with the cream cheese. The one I like is Robert Rothchild Farms roasted pineapple and habenero dip. I guess it's the sweet, spicy, salty combo that I like. Next I would like to try a bottled habenero, mango, ginger sauce I bought. I bet it would work well too.
Just made myself hungry for some!

Jelly or any fruit jam/preserve. These would be my first choices out of my pantry:
Mango chutney could be good for a flavor kick.
If you are really courageous... chocolate! Chocolate actually really accents the flavor of spicy food. -

I've added Jalapeno Jelly as a final layer before the bacon wrap and it melts and mixes well with the cheese. If you look close enough you can see the glistening jelly.

With some cayenne in it too. They are usually gone before the others.

Thats alot goin on there. Does the Shrimp not get lost?
Im not a big pineapple guy, I was thinking diced peaches. -
I am thinking Dried Cranberries would go good!
-
IMHO yes the shrimp gets lost big time!Re-gasketing America one yard at a time.

No idea how this would taste but I would try something like roasted almonds, chopped, and mixed with the cream cheese. Nuts and bacon go well together.
-
I use shrimp all the time and I think the secret is to use large shrimp, 21/26 count or larger. Almost changes ABTs to bacon wrapped shrimp. Sometimes smaller shrimp are overwhelmed by a large jalapeno and cream cheese.

Peanut Butter?

Ron,
I don't think it does. The Gruyere compliments the shrimp nicely. Cream cheese doesn't have a lot of flavour anyway. The shrimp is raw so it will add flavour to the cheeses. I use the diced pineapple and not too much. Not a big fan of sweet anyway. You could use figs, cranberries, dates or dehydrated mangoes. The cayenne doesn't do anything except cleanse the pallet. Sorta like a nice wine

I like to use apricot jelly, pepper jack cheese instead of cream cheese, and mini sweet peppers instead of jalapenos.
The possiblilties are endless, which is why they are so much fun! -
I've been mixing my cream cheese with Carnivore BBQ Sauce. Not a shameless plug; it really adds a lot of flavor.
-
Haha.
Sounds good buddy, good to see you around! -
I use creme cheese, tillamook extra Sharp Cheddar, pepper jack cheese, Dizzy Pig swamp venom, Tabasco, horse radish, and any thing else hot I can find. You got to sweat if you're having ABT's.
Cheers,
Bordello
