Yep. I confess. I usually give my wife an idea of what I want on the table, and she takes it from there. She disapproves of the gun, but it's become a trademark of sorts.
You didn't ask for the ponchartrain sauce recipe, but I'm emailing it to you anyway.

Will this work as a substitute?
Conch, Cakes
Chef Peter Tselikis of The Fish House Encore Restaurant, Sushi Bar & Piano Lounge in Key Largo shared this appetizer recipe.
INGREDIENTS:
1 lb cleaned conch meat
2 eggs
2 oz hard butter
1 oz white wine
1 oz lime juice
1/2 cup vegetable oil
1/2 cup flour
Salt & pepper
Chopped parsley
Procedure:
1 Using a food processor, pulse conch into 1/4-inch pieces.
2 Mold the conch into 3-inch round cakes and freeze.
3 Whip eggs together. Place a skillet over medium heat, add vegetable oil and bring to temperature.
4 Dust frozen cakes with flour and dip into egg wash.
5 Place cake in the hot oil, and cook each side for 4 minutes.
6 Drain hot oil from the pan, add white wine, lime juice and lastly the butter.
7 Cook for one minute, remove from pan.
8 Place cake onto appetizer plate, top with the juice from the pan, garnish with chopped parsley.
Yield: 4 cakes

It's my favorite too. I found a few recipes online that purport to be Pappadeaux recipes. The Ponchartrain is one of them...I'll dig it up and email it to you. I haven't tried it yet, but it's in the stack, somewhere. I've got the dirty rice recipe somewhere too.
I make my wife's favorite, shrimps en brochette, on the egg every once in a while. It's fantastic!
