Thanks Jim, I like it because, like Salmon, it works very well with a lot of different flavors. I reckon that I'd enjoy catching them too  especially on the Fly!

Yes they would be a handful on fly, my personal best is 28# Bull on 20# spin tackle and it kicked my but. We were 20 miles out off Long Key FL and it hit an artificial lure, no weeds and no signs of life where it took the lure I thought the day was going to be a bust when he took the lure. Better keep to Egging Mahi is a great fish for cooking direct on the Egg as it holds together well as one can see in your pictures and being a mild flavored fish it lends well to many seasonings and flavors like tomatillo sauce.

I bet not, Mahi Mahi is one of my favorites. Put that with some Lobster mac and cheese. :)

Lobster mac n cheese? Wow. We call it Dorado and love to catch and eat it as well. They are such beautiful fish. The tomatillo sauce looks real tasty.

I have a killer recipe from Chef William Bracken, so labor intensive and $$$$$$$. I'm sure I will be making it again. Will post and see if I can share his recipe.

The tomatillo sauce really made the dish.
