Irish Italian Nachos a/k/a the pile

I had a cook in mind for today, but while at the store this morning, the main ingredient didn’t look too good, so it had to be delayed. This is what happened while wondering around the store searching for something different:











Throw a second story on for good measure:

it did go quick, me, the wife & daughter polished it off, washed it down with a grilled pineapplehappy in the hut

whacky, there is an Irish pub nearby that uses potato chips instead of tortilla chips, but everything else is pretty much the same as standard nachos, I just substituted the italian sausage & calamata olives, & of course added a little smoke...happy in the hut

Jay, we did another batch last night, this time with cayenne peppers & cheddar, used a measuring cup to pour the batter in the muffin pan while on the egg, that seems to work the best so far, let us know how they turn out, Marchappy in the hut

Hey Marc, That looks very good. I bet you all had a good time making "the pile".
I assume the plate setter and the raised pizza stone kept the bottom from getting over cooked.

thanks Tim, and yes, the set-up I went with was to prevent the chips from drying out... all I was trying to do was to get enought heat in there to melt the 2 layers of cheese, & fuse everything together :ermm: :laugh: , plus 20 minutes or so in the egg with the residual smoke (I put one big cherry chunk in there for the sausage) just gave a really nice flavor to the whole thing without overpowering it, it was delicioushappy in the hut

Nachoes look good, too. We had some on potato crisps in Arlington at an Irish Pub - first time I'd ever seen that....must be an Irish tradition? But probably even better on the EGG :woohoo: -
Don't know which is better. Your cook'en or photo skills! Just a great job on both! Were the potatoes all ready cut like I figure? Haven't heard from you or seen you on the board as much. Things I figure are pretty hectic getting things line out. I got faith! Sides I may need ya one day!! :laugh:

Don't take this wrong but you have a lot of time on your hands. What I am saying is you come up with A LOT of neat ideas and I am always impressed. You never stop amazing us. Too bad you don't have your own show on the Food Network.

Gary, for the most part the things I cook don't take any more time than it takes to cook burgers or chicken. If you look at my posts, you will notice a common thread, they are all very simple concepts, and all put together with simple methods. No multi-step or difficult processes. While they may be different, they're no more time consuming... we all have to eat anyway....
