Tried Zippy's crumpets...

Morning All:
When I saw Marc's posts about the crumpets I knew I had to try them sometime. Well tonight was the night. Kathy mixed the batter earlier this afternoon and then we looked through the fridge to figure out what to put in them. Decided on some leftover pork tenderloin, bacon bits, shredded Asiago and shredded Cheddar/Monterrey Jack. Here they are ready to go on the Egg...

Of course we put them on before reading Marc's response to my post on his nachos where he said we should pour the batter in the muffin pan while on the Egg :huh:
This did work though. Here they are after about 18 minutes at 425 to 450 (one out of pan already)...

We probably should have left them on a couple minutes longer, but they were still very tasty and definitely something to do again. The three crumpets each actually made a nice meal...

Marc...Thanks for the recipe and idea. Next time may do a double batch and try some fruit and/or chocolate chips in some as a "dessert crumpet".

Jay, they look great, funny that you used Asiago, I actually bought a chunk of it for the first batch, but didn't want to waste it if I screwed it up so went with the cheddar, 4 batches later & I still have the Asiago... how was the flavor? I also find that filling the muffin pan 1/2 way (or even a little less) with batter works well, it cooks all the way through before burning the outsidehappy in the hut

Morning Marc:
Asiago is probably my favorite cheese! I use it in just about everything. These were very good, but like I said probably should have cooked a couple minutes longer. The middle was just a little underdone. We only filled the muffin pan about 1/2 way (one was fuller than the others), so probably a little less would have helped.
Overall very easy and tasty...will definitely do them again. Also look forward to trying some fruit and/or chocolate chips in some.Have a GREAT day!
